Quarantine Cooking

Want a recipe that will give you the GREEN you need during this Quarantine?!? Here's one of our favorite recipes from our 30 Day Shred that we hope to bring back soon!!

Ingredients: 1 Bag of Chopped Kale or your favorite kind of Green 1 Green Apple, cored and finely chopped 1 Shallot, finely chopped 1 Can Kidney Beans 1 Can Garbanzo Bean

Dressing: 3T Olive Oil 1t Lemon Juice 1t Dijon Mustard 1t Apple Cider Vinegar Salt & Pepper

Thoroughly rinse all the beans in water and let sit in a colander to drain or pat down with a paper towel to adsorb any excess liquid. Add them to a large bowl then gently fold in kale, apple, and shallot.

In a small bowl, whisk the dressing ingredients together and drizzle over the salad. Gently toss and add salt & pepper to taste.

Serve with grilled chicken or hard boiled eggs for more protein. ENJOY!! 👏🏻👏🏻👏🏻
